Tomato Based Stew Recipe
Serves 3
Cooking Time 30-40 mins
A mildly spicy stew that can be cooked in one pot. Meats can easily be swapped for whatever you have leftover. Perfect for a winter evening.
Ingredients
- 2tsp Cumin
- 2tsp Smoked Paprika
- 2 Cloves of Garlic
- 2 Peppers (red or yellow work best)
- 2 Chilli Peppers (leave out if you want less spice)
- 400ml Chopped Tomatoes (2 Tins)
- Left Over Meat/Veg (Enough for 3 people)
- Stock (Optional)
- 1 Onion
- Olive Oil
- Salt and Pepper
- Side of Bread (for dipping)
Instructions
- Chop all ingredients
- Fry meats first in large pot/pan (medium heat)
- Add other ingredients (harder veg then softer veg)
- Add cumin and fry briefly before adding chopped tomatoes
- Add smoked paprika, rock, salt, and pepper and mix
- Leave to simmer for about 15 mins to thicken consistency (low heat)
- Serve in bowls with bread on the side
