Slow Cooked Beef and Red Wine Stew
Serves 5-6

Cooking Time 8-10 hours
A tasty beef stew with lots of flavour. Great for guests or meal prep in the winter months.

Ingredients
- Onion chopped
- 2 Celery Sticks chopped
- 2 tbsp Olive Oil
- 2 Large Carrots sliced into rounds
- 2 Bay Leaves
- 2 tsp Thyme
- 2 tbsp Tomato Purée
- 2 tbsp Worcestershire sauce
- Beef Stock cube or pot
- 700g Beef cut into chunks
- 2 tsp Cornflour
- 2 tsp Thyme
- Sweet Potato chopped into cm chunks
- 1 Leak chopped into cm rounds
- Half a bottle of Red Wine
- 1 Red Pepper Chopped
- 2 Garlic Cloves diced
- Pepper
- 400ml mixed beans
- Bread
Instructions
- Chop all the veg and meat
- In a large frying pan fry the beef and garlic until the beef is beginning to brown on the outside
- Add the onion and celery and continue to fry until they begin to soften, about 5 mins
- Add the carrots, bay, leak, pepper, and thyme, fry for 2 mins, stir in the purée and Worcestershire sauce
- Pour everything into the Slow Cooker
- Add the sweet potato, mixed beans (after draining), stock cube or pot and red wine to the slow cooker. Season with pepper. Add 200ml water and mix in cornflower to thicken the gravy
- Slow cook for 8-10 hours on a medium heat (10 if the beef is tough)
- About half an hour before finishing add the parsley and put the heat up to high
- Serve in bowls with bread to dip
