Chicken Pilaf Recipe

Another of my all time favourites. Not too difficult to cook, only needs one pot and is pretty cheap too.

  1. Make chicken stock with turmeric
  2. Chop chicken into bitesize chunks
  3. Slice leak into 1cm rounds
  4. Season both sides of chicken and fry in oil in a large pot, high heat (you want it to be golden)
  5. Add Bacon and Leak and fry until bacon is cooked and leak has softened
  6. Add stock to pot along with rice and peas
  7. Bring to a boil with lid on the pot and then reduce to a medium heat. Leave to cook for about 20 mins (Stir periodically to prevent sticking) (Extra water may need to be added to cook the rice)
  8. Server with parsley and chives on top
