Chicken Pilaf Recipe

Cooking Time 30-45 mins
Another of my all time favourites. Not too difficult to cook, only needs one pot and is pretty cheap too.

Ingredients
- Cooking Oil
- 2 chicken Breasts
- 2 Rashers of Bacon
- 1 Leak and/or Peas
- 2 Servings Rice
- 500ml Chicken Stock
- 1tbsp Parsley and Chives
- 2tsp Turmeric
- Salt and Pepper
Instructions
- Make chicken stock with turmeric
- Chop chicken into bitesize chunks
- Slice leak into 1cm rounds
- Season both sides of chicken and fry in oil in a large pot, high heat (you want it to be golden)
- Add Bacon and Leak and fry until bacon is cooked and leak has softened
- Add stock to pot along with rice and peas
- Bring to a boil with lid on the pot and then reduce to a medium heat. Leave to cook for about 20 mins (Stir periodically to prevent sticking) (Extra water may need to be added to cook the rice)
- Server with parsley and chives on top
